Grandma's Sun Soup
Grandma is naming the soup after the sun because it warms and relaxes the body. The sun soup is extremely nutritious and packed with vitamins. It contains vitamins A, B, and C, as well as B6, B12, folic acid, calcium, phosphorus, potassium, and iron.

- Serving 4 people
Ingredients
- 1 butternut squash/hokkaido
- 2 potatoes
- 2 carrots
- 2 cloves garlic
- 4 tbsp. olive oil
- 1 liter of water
- 4 vegetable bouillon cubes
- 1 can coconut milk
- Juice from 1 orange
- Juice from half a lime
- Approx. 0.5 tsp chili flakes (adjust to your taste)
- About 1 tsp. rosemary (adjust to taste)
- For the topping, use creme fresh (vegan creme fraiche), parsley, and pumpkin seeds.
Instructions
- The vegetables are washed, peeled, and cut into coarse cubes.
- Add olive oil, bouillon cube, and chili to a pot and let it simmer for a bit.
- Add the vegetables and the juice from the orange to the pot and let it simmer for about 10 minutes.
- Afterwards, add water (enough to cover) and the coconut milk. Let it simmer down for about 30-40 minutes.
- Blend the contents of the pot into a delicious soup.
- Season to taste with salt and, if desired, a little lemon juice.
- Topped with fresh parsley, a dollop of creme fraiche (vegan sour cream), and toasted pumpkin seeds.
